Ingredients:
- 1 cup small dried kidney beans
- 1 clove garlic, halved
- 1/4 teaspoon crushed hot red pepper
- 1/4 teaspoon salt
- 1 bay leaf
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1/4 teaspoon crushed hot red pepper
- 1/2 teaspoon salt
- Freshly ground black pepper, to taste
- 2 teaspoons chopped fresh coriander
- 2 tablespoons red wine vinegar
- 1/3 cup plum jam
Preparation:
- Soak the beans overnight in ample water to cover. The next day,
bring to a boil with 1 clove garlic, 1/4 teaspoon of red pepper,
of salt, the bay leaf, and the 2 tablespoons of vinegar. Simmer
until just tender, about 1 hour. Drain.
- While the beans are still warm, stir i the remaining ingredients.
I stand at room temperature until cool. Then refrigerate several
hours or overnight before serving.
